The Ultimate BBQ Turkey Nachos Recipe for Wild Game Nights

Turkey hunting season is in full swing in some parts of the country, and on the precipice in other parts. It’s that time of year when gobblers are strutting and tags are being filled. And that means that wild turkey is on the menu.

This recipe utilizes the thigh meat, a portion of the bird that is criminally underestimated. The thighs cook down and tenderize, and then are shredded and used as the primary protein in our ultimate BBQ Wild Turkey Nachos. It is an easy, no-fuss recipe that is perfect for a weekday. Most of the work is done by the crockpot.

It’s messy in the best way, loaded with bold flavor, and easy enough to throw together without overthinking it.

BBQ Turkey Nachos Ingredients

  • 2 turkey thighs
  • 1 cup turkey broth
  • 1 ½ – 2 cups barbecue sauce
  • 1/2 bag tortilla chips
  • 3 cups shredded taco blend cheese
  • 1/2 cup white cheese sauce
  • 1/2 cup medium or mild salsa
  • 1/4 cup cup chopped scallions
  • 1/4 cup Hi Mountain Seasonings Poultry Rub

Directions

The first step is to clean the turkey thighs of any fatty tissue, silver skin, or other unwanted material. Once clean, pat dry. Rub both sides of turkey thighs in Hi Mountain Seasonings Poultry Rub.

Add thighs to crockpot. Add 1 cup turkey broth. Turn crockpot on high. Let turkey cook on high for two hours, then turn crockpot to low, and continue to cook low and slow for approximately four hours.

Once turkey meat is finished cooking through, transfer to tray or dish. Shred cooked turkey off the bone, separating any loose tendons or other undesirables from meat. Once shredded, add meat back to crockpot with broth still in the bottom, stir, and cook abother half hour.

Preheat your oven to 350°F.

Spread your tortilla chips across a large baking sheet in a single layer. Top tortilla chips with shredded turkey. Assemble toppings, statrting with salsa, then a layer of cheese, then top with the shredded taco blend cheese. Finish it off with the chopped scallions.

Slide the tray into the oven and bake for five to ten minutes, just until the cheese is melted and everything starts to come together.

Serve it hot and melty. You could add a drizzle of extra barbeque sauce, salsa or even sour cream and/or guacamole.

Tasty Turkey Tips

Go with thicker tortilla chips. They will hold up better under the weight of the toppings and won’t turn soggy halfway through.

This recipe is built to be versatile. Add whatever toppongs sound delicious. Maybe that’s sliced olives, diced red onion, roasted red peppers, cilantro, or black beans. Get creative.

Leftover shredded turkey could be turned into turkey tacos or enchiladas.
